Cajun Grilled Chicken Salad with Kiwi Lime Vinaigrette
Fresh Romaine Lettuce
Fresh mixed greens
4 Chicken breast
1 bottle of Lawry's Mesquite Seasoning Marinade
1 Kiwi
2-3 Pineapple rings
2-3 limes (or lime juice)
1 bunch of Fresh Mint
1 teaspoon Honey
Chili powder
Onion powder
Ground Red Pepper
Salt/Pepper
sugar
EVOO (extra virgin olive oil)
Marinate the Chicken breast over night. Mix together the onion powder, chili powder, salt & pepper and red pepper (or your choice of spicy seasonings, to taste) and coat the chicken breast, and Grill.
* I like the make the Chicken extra spicy because the Vinaigrette is so sweet*
In a blender, add 3 pineapple rings, half-all of the kiwi, squeeze the juice from the limes- or about 1/2 cup of lime juice, honey, a small pinch of sugar (or Truvia), a few mint leaves, and a few drizzles of olive oil- I do it all to taste and add more of each as I go!
Drizzle the Vinaigrette over the salad, and add the grilled chicken, Garnish optional :) This is a REALLY good Summer dish
