Light Strawberry Pie- A MUST in the Summer in this house :)
For the Crust:
Preheat oven to 350
1 Package of Graham Crackers, finely crushed in the food processor
1/4 cup Butter, (half stick) melted
1/4 cup Granulated Sugar
In a bowl, add together crushed graham crackers, sugar, and melted butter, mixing with a fork. Press into an ungreased 9inch Pie Dish. Bake for 8-10 minutes. Let cool COMPLETELY before adding the pie filling.
For the Filling:
2 containers of Fresh Strawberries, washed and sliced
1 8oz container of Cool Whip
2 cups ice cubes
2/3 cup of boiling water
1 (3oz) package of Strawberry JELL-O
Boil water and pour 2/3 into a measuring cup and whisk in jello packet until dissolved. Add ice cubes and stir (using a whisk) constantly until gelatin is thickened, about 2-3 minutes. Remove any un-melted ice. Using a whisk, blend in Cool Whip, and mix thoroughly. Fold in Fruit. Chill if necessary, until mixture will "mound" up. I like to chill it for 5-7 minutes in the fridge before, so isn't running over the sides of the pie dish. Spoon into crust and Chill for 3 hours, no shortcuts or it won't hold up! :) Enjoy! This works with other fruit as well, blueberry jell-o and fresh blueberries, raspberries, or your favorite fruit flavor!
