3 tbsp pumpkin puree, I used Libby’s
3 tbsp sugar
1 tsp pumpkin pie spice
2 tbsp vanilla extract
2 cups whole milk
1-2 shots of espresso
In a small saucepan, mix pumpkin puree and pumpkin pie spice over low heat for a minute to get rid of any raw squash/pumpkin taste. Add sugar and continue to stir over low heat. (The mixture should resemble the gooey filling in cinnamon rolls!) Whisk in vanilla and milk. Continue to heat until milk becomes frothy , but watch so it doesn’t burn or boil over whisking occasionally. Transfer to measuring cup to make it easier to pour into your favorite coffee mug. Makes 2 drinks, or one very large latte if you don’t want to share! Top with whip cream or my Whip Cream Toppers and sprinkle some pumpkin pie spice over the top. Enjoy!
