Yields 11 Tablespoons
½ cup plus 1 tbsp Black Pepper
1 tbsp Coriander
1 tbsp Granulated Garlic
On the last day of curing the brisket rinse well and allow to soak in water for 30 minutes to remove excess salt
Combine rub ingredients and season the brisket after it is dried well.
Smoke the brisket over apple wood at 175 degrees for 3-4 hours
Transfer to a roasting pan with an inch of water and braise for an additional 3-4 hours at 275 degrees until tender.
Allow to cool then slice.
