½ cup plus 1 tbsp Black Pepper

1 tbsp Coriander

1 tbsp Granulated Garlic



  • On the last day of curing the brisket rinse well and allow to soak in water for 30 minutes to remove excess salt

  • Combine rub ingredients and season the brisket after it is dried well.

  • Smoke the brisket over apple wood at 175 degrees for 3-4 hours

  • Transfer to a roasting pan with an inch of water and braise for an additional 3-4 hours at 275 degrees until tender.

  • Allow to cool then slice.
