Basil & Mozzarella Stuffed Chicken Breasts
4 Chicken Breasts
1 bunch of Fresh Basil
2-3 cups of shredded Mozzarella cheese
½ cup Swanson Chicken Broth
McCormick Minced Onions
Lawry's Seasoning Salt
McCormick 'Perfect Pinch' Garlic/Basil Seasoning
Preheat Oven to 425
Place chicken breast standing, and with a sharp knife, ( I used my pairing knife), cut into the chicken lengthwise, but not all of the way through. Lay flat, and use a meat mallet, pound chicken until thin, about a quarter inch.
Season the inside of the chicken breast with lawry’s seasoning salt (or salt and pepper) and McCormick Garlic/Basil seasoning. I have also used McCormick Roasted Bell Pepper/Garlic.
Add 3-4 basil leaves to each chicken breast, sprinkle in McCormick Perfect Pinch Garlic/Basil, add some mozzarella to one end, and roll the chicken. You can stick toothpicks into the sides to keep everything from coming out when baking if you wish. Place all of the chicken breasts into a glass baking dish, sprinkle with Lawry's Seasoning Salt, McCormick Basil, Salt/Pepper, and McCormick Minced Onions. Pour the Chicken Broth into the baking dish and cook for approx 25-30 minutes
