Caribbean Jerk Chicken with "Fried Rice"
4 Chicken breasts
1 bottle of Lawry's Caribbean Jerk marinade
1 bunch of Green Onion
1 can dice Pineapple
2 packages of Knorr's Chicken Fried Rice
1 can of Peas
Swanson Chicken Broth
salt/pepper
butter
Marinate the chicken in the Lawry's Caribbean Jerk overnight. In the summer I like to throw it on the grill, and in the winter I love my George Foreman.
Cook the rice according to the package, but instead of water, use Chicken broth and a little pineapple juice. Once the rice is cooked, stir in pineapple, drained peas, and green onions. It's as simple as that! :)
