Chocolate Chip Pumpkin Squares

3 ½ cups All Purpose Flour, I used King Arthur

¼ Tsp Baking Powder

2 Tsp Baking Soda

1 ½ Tsp Salt

2 Tsp Nutmeg, I use McCormick for all spices

2 Tsp Cinnamon

2 Tsp Ground Cloves

2 Tsp Ground Ginger

1 ½ Cup Granulated Sugar

1 ½ Cup Brown Sugar, packed firm

1 Cup Vegetable Oil

1 ½ Tbsp Vanilla

2 Cups Libby’s Canned Pumpkin

4 Eggs

2 Cups Mini Chocolate Chips, or more if you prefer

Preheat oven to 350

In a medium size mixing bowl, combine flour, baking soda, salt, and spices. In a large mixing bowl, combine sugars, oil, vanilla, and pumpkin with an electric mixer. Add in flour mixture a little at a time until combined. Add eggs to mixture one at a time, and mix until combined. Stir in chocolate chips.

If you don’t have an individual square baking pan, you can make these into muffins, pumpkin bread, or pour into a large glass baking dish and cut into squares!! I love this recipe without the chocolate chips to make pumpkin bread. You could also sub the oil for vanilla greek yogurt.

Lightly grease your pan of choice, if you are making bread bake for 50-60 minutes. In a large baking dish, about 40-50 minutes, or until a toothpick inserted comes out clean. If you make into individual square or muffin pan, bake for about 15-20 minutes! Enjoy
