Blueberry Muffins
3 cups all-purpose flour
1 1/2 cup white sugar
1 teaspoon salt
4 teaspoons baking powder
2/3 cup vegetable oil
2 eggs
2/3 cup milk
2 cups fresh blueberries
1 cup white sugar
1/3 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
Zest and Juice of one lemon
Preheat oven to 400 degrees. Grease muffin pan or line with muffin liners.
Combine flour, sugar, salt, cinnamon, and baking powder. Place vegetable oil into a 1 cup measuring cup;add the egg and enough milk to fill the cup.
I doubled the batch,
**so add 1/3 Veg Oil , egg and milk to make 1 cup, do that twice, depends on the eggs!**
Mix together and pour into flour mixture and mix well. Stir in lemon juice and zest, and fold in blueberries. Fill muffin cups almost to the top (these make big muffins!)
Bake for 20 to 25 minutes in the preheated oven, or until done. :) I doubled this batch!
