2 Cartons of Cocktail Tomatoes, approx. 16 tomatoes
1 ½ `Cup Mayo
1 Bunch Green Onions, chopped finely
1 3oz bag Oscar Mayer Real Bacon Crumbles
Cabot Smokey Bacon Cheese
You can use cherry tomatoes, but I find they are harder to work with since they are so small in size. Cocktail tomatoes are slightly smaller than a tangerine.
Rinse tomatoes and pat dry. Using a pairing knife, cut a circle into the top of the tomato, and use a melon baller to scoop the insides out. Repeat for each tomato, and set aside. In a mixing bowl, combine mayo, green onions, and bacon. Finely grate your cheese over the top, about ¼ cup, and mix together. If you can’t find Cabot brand cheese, parmesan or white cheddar cheese works great. Spoon the mixture into each tomato and enjoy! You can garnish the tops with more bacon and green onions if you wish.
